Bò Kho - Vietnamese Beef Stew

A great start for anybody new to Vietnamese stews and broths. This traditional beef stew requires only a handful of spices and aromatics, and you eat it with a baguette.

Bò Kho literally means ‘beef stew’ in Vietnamese. For anybody familiar with Vietnam’s iconic Phở, this is a far simpler, streamlined path to classic Viet flavour. I enjoyed various forms of Bò Kho in Vietnam, and I’m absolutely buzzing to tell you about some of the unusual ways in which it can be eaten. Let’s go!
