Cà Ri Gà is a Vietnamese dish you won’t find at restaurants. A lady who operated a bánh mì café in Hanoi kindly fixed me a plate of this yellow curry after I asked her where I could find it. It turns out: you’ll get this dish at home. She made it on her gas camping stove in minutes, with a plate of rice and a tangle Đồ Chua (pickled carrots and radish). That’s exactly the spirit of this Vietnamese dish: you can whip it up fast and with little warning, because you probably have everything you need to make it already. Let’s get to it!
