I first tried this bake on a visit to Copenhagen a few years ago. I visited the popular Danish bakery ‘Andersen & Maillard’ in the city’s Nørrebro district. One of the patron bakers put this delicious delicacy in their showcase, the ‘brunsviger’, which comes from their hometown on the Danish isle of Fyn. Brunsviger is made with a high-hydration, sweet yeast dough, which guarantees a light, bubbly and crusty cake. Because the dough is incredibly moist and sticky, it doesn’t require kneading. The best feature though: before baking, the dough is swamped in fresh butterscotch. During baking, the butterscotch slips into and around the dough, creating trenches of toothsome toffee. It’s gorgeous sliced and served with coffee. Let’s go!
