As Valentine’s Day approaches, it’s good to have a low-effort, elegant dessert up your sleeve. ‘Pots de Crème’ are a go-to staple to make at home, requiring just milk, cream, eggs, sugar and good-quality chocolate. Unlike a regular chocolate mousse, pots de crème are effectively an enriched chocolate custard which sets to a rich, satin-like texture in the fridge. Serve the pots cold with a tall mound of whipped cream and a little grated dark chocolate. This recipe will make two very generous portions, or four slightly modest ones. Pure pleasure for anyone.
