‘Ayam Bawang’ is just one feature of the Malaysian dinner table, often served with a heap of rice and crunchy salads. It makes an excellent offering for any barbecue and can be snatched and eaten by hand - even when it’s cold. The secret is in the sauce, which is made with caramelised onions bolstered with Malay spices, curry powder and a couple of flavourful condiments. Don’t be put off by the idea of caramelising onions; in this recipe I’ll give you my hack for caramelising onions in just 10 minutes, instead of the usual 45 minutes. It’s epic. An epic hack for an epic Malaysian dish after all. Let’s go!
