This irresistible fruit salad comes from Mauritius, and combines a selection of fruits like pineapple, cucumbers and mangoes with a sweet and sour pickling liquor. The combination of South Asian and European ideas isn’t unheard of in Mauritius given its busy history of occupation. The pickling liquid is a simple combination of salt, water, brown sugar and vinegar, and has become a popular, hydrating snack in Mauritius, especially when eaten with tamarind sauce. You can make it with a selection of fruits, or just a single fruit. Unlike a traditional pickle though, Mauritian ‘fruits confit’ isn’t made for the long haul, and will only last a week after preparation when stored in the fridge. The benefit, however, is that you can open it after just 24 hours after making it and enjoy your tangy jar of fruity jewels with seafood or curry dishes - they’re also surprisingly good on a cheeseboard.
