Northern Thai Chicken Noodle Curry (ข้าวซอยไก่)
Known affectionately as 'khao soi', this creamy chicken curry from the North of Thailand combines chicken, crispy egg noodles and an exciting assortment of toppings.
‘Khao soi’, as it’s known in Thailand, is a beloved curry dish that combines a flavourful paste, chicken and a creamy coconut-based broth. It’s most recognisable asset is a fascinator of crispy fried noodles on top, which melt into the curry underneath as you eat it. It’s most famous in the northern city of Chiang Mai, though it’s a specialty of the region’s traditional Lanna-style cuisine. You’ll also find a similar dish across the border in Burma. This dish has it’s own special paste. For the sake of ease, we’ll use a generic Thai red curry paste as the base, and augment it with particular spices to create a true khao flavour. Finally, the toppings make this dish special. Crispy fried noodles - which can be prepared in the air-fryer - along with chilli oil, diced shallots and preserved mustard greens make an exciting arrangement in the bowl that’s as good to look at as it is to eat. For all of these reasons, this is my absolute favourite Thai dish. Let’s go!
