Norwegian Almond Cream Cake (Kvæfjordkake)
This traditional Norwegian cake combines layers of custardy sponge, crisp meringue, toasted almonds and angelic heaps of whipped cream.
This almond cream cake is highly thought of in Norway and has earned it the name ‘verden’s beste’ - ‘world’s best [cake]’. It’s traditionally served around the Norwegian Constitution Day - May 17th - or ‘syttende Mai’ as known in Norway. On this day, Norwegians gather outside and host festivals in traditional dress, as well enjoying good food and drink. This cake, formally known as ‘kvæfjordkake’, makes a showstopper appearance and features a moist, custardy sponge, crisp almond meringue and a heaving layer of whipped cream. The eggs for the cake are separated; the whites make the meringue layer, the yolks make the sponge - so there’s no loose ends.
