Consider this dish Portugal’s answer to the Italian risotto. This dish is much less demanding them a risotto, and only requires a couple of short bursts of stirring. This relatively hands-off approach gave it the name ‘malandrinho’, which means ‘little rebel’ in Portuguese. You can use a risotto rice to make this, better yet a paella/bomba rice, or the traditional choice which is Portuguese carolino rice. Either route, this dish makes a rich, tomatoey base to serve alongside almost any protein: grilled chicken, fish or vegetables, or frankly it’s just as often eaten on its own as a light yet cosying comfort dish.
