This no-bake cheesecake comes from the far north of Scotland - the Orkney Islands. Famous for their delectable butter fudge, it was only a matter of time before it met a cheesecake.

Even cheesecake purists could get behind this no-bake cheesecake. This recipe was actually adapted from the official recipe provided from Orkney Island Ferry, who sell this popular cheesecake on board their Orkney-Shetland ferry route. It’s a cheesecake with an oaty base and creamy, tangy filling flecked with buttery fudge. I made some adaptations to increase the Scottish factor, the main being the inclusion of ‘crowdie’. Crowdie is a rich and refreshing Scottish curd cheese that makes a wonderful cheesecake - but you can’t get it outside of Scotland. The remedy here is cottage cheese, blended smooth and combined with cream cheese for richness. The tangy yet rich combination is a spot-on substitute for crowdie cheese. As for the fudge, Orkney Island is famous for it’s distinctive fudge, which is buttery and crumbly. You can use a shop-bought fudge for this cheesecake, but if you can buy ‘Scottish tablet’, the result is much closer to true Orkney fudge. Let’s go!
