In Scandinavia, outdoor pursuits really are for everybody. Especially during late summer, most Swedes will be outside in nature foraging for berries, and in winter many Swedes will take to Nordic walking and skiing. Pursuits like these can take you quite far from home and often miles away from towns, so it’s advisable to pack a lunch. For quickness, Swedes will often pack a ‘nötbar’ (nut bar) or a ‘vandringsbar’ (hiking bar) for a quick burst of energy and nutrition. These bars are commonly sold in supermarkets in Sweden and offer all sorts of nuts, seeds and dried fruit. Making them at home is a godsend if you’re highly active, don’t have the stomach for a big breakfast or just need a 4pm boost of energy at the office. They also last up to 2 weeks in a container; so bake once, and you’ll have a bar each day for a fortnight. I’ve included variations for different nuts and fruits that you might like too, though I highly recommend making them with dried blueberries for Nordic spirit. Let’s go!
