Swedish Marzipan Tortes (Mumma)

These traditional Swedish mini tortes are made simply with marzipan, butter and eggs. What's more, they're baked in a humble muffin tin. An excellent accompaniment with afternoon coffee.

‘Mumma’ are old-fashioned Swedish treats which are only found in a handful of bakeries around Sweden nowadays. They’re small but they pack a punch - made with just marzipan, butter and eggs and baked in a muffin pan. Once they’re cool, toss them in cardamom sugar for an aromatic, sparkly finish - personally I love them with a thick, white icing dribbled over the top, and a skiff of freshly ground cardamom on top - divine with afternoon coffee! They’re an excellent fast-track to Nordic bakery flavour. Let’s go!
