Just when you thought you knew kebabs inside out, Turkish Chicken Chops bring a slightly different experience of the Turkish grill. Chicken chops, or ‘tavuk pirzola’ are made with boneless chicken thighs - with the skin left on - that are seasoned with Turkish baharat seasoning then slammed onto a hot grill. No skewers or swords are required for these. The baharat seasoning is used for kofte and shish-kebabs, and normally contains a particular type of chilli flake called ‘urfa biber’, which comes from the city of Urfa in southern Turkey (BEST BUY). It’s dark, smoky, fruity and actually very mild in heat. I will show you how to create this baharat spice blend, and how to debone whole chicken thighs for perfect skin-on chicken chops that crisp perfectly. Let’s go!
